We are knee-deep in Summer planning - sending the kids to gymnastics, summer enrichment, and farm camp are just some of the fun options we are considering. I really suggest looking for summer enrichment programs if they are offered through your school district. It was very affordable and our kindergarten-age child gets to take a cooking and science class. If your school district doesn't offer it, then I suggest looking into your school library. There are many fun classes to keep the kids occupied throughout the summer.
Speaking of Summer... There is just something about fresh off-the-vine tomatoes, with soft pillowy mozzarella and sweet tangy balsamic dressing that is the perfect summer side dish! YUM!
This Italian, balsamic, tomato, basil, and mozzarella salad will be your family's favorite summer salad. It comes together so quickly and easily. You can
use it as a summer side dish, or add it to greens for an amazing summer lunch, or add it on top of a grilled chicken breast for an amazing dinner.
Italian, Balsamic, Tomato, Basil, Mozzarella Salad
Ingredients
This will feed 1-2 people, I suggest each person will eat about 1 tomato.
1-2 Fresh tomatoes
1 Medium-large ball or log of fresh mozzarella cheese
Fresh basil leaves (clean & dry)
¼ cup Virgin olive oil
¼ cup Balsamic vinegar
Balsamic glaze - you can make your own or purchase it. This is very important don't skip it!
1 TBL Good Seasons Italian dry salad dressing
This mozzarella salad is best served on the same day.
Directions:
Grab a sided-walled dish or pie plate works well to assemble the salad in. Slice the tomatoes and mozzarella into 1/4-inch thick slices.
Start assembling: Tomato, Basil, and Mozzarella in the dish and repeat until you have used every slice.
Make the Dressing: Mix together balsamic vinegar, olive oil, and the Good Season Italian dry salad dressing until well mixed.
Sprinkle the sliced tomatoes and cheese with salt and pepper
Pour the dressing you made slowly over the tomatoes, until all dressing is used.
Add balsamic glaze by drizzling over the salad. I like to go back and forth in a zig-zag pattern
Serve and enjoy!
